As lockdown drags on, I have found myself to learn and enjoy baking now more than ever. It keeps me sane from being locked inside and feel so isolated from the rest of my family and friends.
One night, my late night craving has turned into passion and joys that I would love to share my creations with you all. These homemade mooncakes are my little special creations with my family.
This is our first baby step to hopefully spread the joys of family spending time together to make something fun and enjoyable. Beyond that, I hope to share the Vietnamese and Chinese culture of celebrating Autumn festival, which kids get to play lanterns and sparklers, and grown-up get to drinks Oolong tea, and catch up with each others about our life (this was pre-Covid time, now I think everyone is more or less on the same juggling boat ๐). Most importantly, we get to share and enjoy all type of different moon cakes flavours together!

These beautifully mooncakes are a little savoury, a little sweet, and a little nutty (just like me, who else would start baking in the middle of the night for a craving ๐

The moon cakes have a light crunch as the crusty outer layer embraces the lotus red bean filling hugging the salted egg yolks inside. Try one with or without salted egg yolks to see what you might be missing out on. My family reckons we can go through them 20 moon cakes in a day ๐
