A stack of roasted chicken, salsa verde, pickled green tomato, smoked mayo and cheddar between .melbourne bread, this one packs everything green that deserves to be seen. 👌🏼
Now available at every MAKER – but only until the end of the month.

The response to Peru José Rivera Sidra was incredible, so we’re going back on the roaster for another round!
José, known affectionately as “Pepe”, runs Origin Coffee Lab alongside his wife Mariagracia in northern Cajamarca, Peru. Through OCL, they work closely with producers across the region, paying premiums tied directly to cup quality and supporting growers through education and long-term sustainability initiatives.
This lot comes from José’s own farm, El Rejo, where the Sidra variety is grown alongside Bourbon and other experimental cultivars at 1,750–1,800 masl.
Sidra has become increasingly celebrated within specialty coffee for its expressive and refined cup profile, appearing frequently on the world competition stage in recent years. For us, this release captures exactly what Select Series is about – clarity, complexity and a memorable drinking experience.
Pre-orders now open for a limited run, roasting tomorrow!

“Really enjoyed this coffee. It feels like the roast is doing the heavy lifting, letting the coffee sing rather than shouting over it.
Everything you could ask for... milk chocolate, plum and nuts, comforting, clean, and very much doing what you want a Brazilian coffee to do.”
We loved watching The SMITH get put to work in the careful hands of . Thanks for sharing, Saul – we’re stoked you enjoyed brewing with this core MAKER espresso at home. 🏠

New on filter: Jhoan Dussan AAA. 🇨🇴
From La Campiña in Tolima, Colombia, Jhoan Ricardo Dussan has spent more than a decade refining his craft, building on three generations of meticulous coffee growing; this lot reflects that work, with Jhoan and his wife Carmen approaching coffee with equal parts precision and care.
Thoughtful fermentation, slow drying and a remarkable mountain microclimate deliver a cup with clarity, balance and depth, reminiscent of blood orange, panela and black plum.
Available now on the filter bar and online, only for a short time.

Tiramisu Swiss Roll. If you know, you know.
Baked just for us, by .melbourne.

It’s the small conversations that happen at the filter bar that are just as important as the coffee itself.
A quiet moment between you and your barista, talking through the coffee, sharing the process, and watching the cup come to life, together.
Thank you to for capturing this experience during their latest visit. We love to see it. ☕️

Inside MAKER Lt. Collins: an open space to find good, honest coffee in the rhythm of Melbourne's busy CBD.
Designed for quick grab-and-go coffees, slower moments at the filter bar, and everything in between.

Our next Select Series has just dropped: La Ñusta, Peru.
Grown in Chirinos, Cajamarca, this stunning Yellow Gesha is produced by Milagros Ramírez – a third-generation coffee grower who combines traditional knowledge with modern, sustainable practices.
We first tasted this lot at a cupping in Melbourne late last year. It was so good, we secured it on the spot!
Bright citric acidity with jasmine-like florals, La Ñusta is one of the most expressive coffees we've released this year – but there's only a handful available, so don't wait.
Be one of the few to grab one (or two – it's that good 👌🏼) online or from the limited stock at each MAKER location.
