*** Goodbye, for now.
Sad, but true. May 2nd will be the final service for this version of Vex.
From the bottom of our hearts, we want to thank you all for the support. The relationships we’ve built with our locals, guests, staff members and suppliers are what it’s truly all about. There’s a real joy in seeing familiar faces in this room, and we hope to get to see you all again over the next 6 weeks.
You can’t kill Vex. But in truth it probably never should have existed. From post service chats amongst friends in 2016, to questionably opening up in the madness of 2020. It’s already been quite a journey.
We jumped on a rare opportunity and built things up slowly with whatever we could afford to throw at it. No silent investors, no outrageous finance. Just a slow and sustainable growth model.
We wanted to test ourselves, to see if it’s possible to build a venue that focuses inward, rather than jumping on hype trains and current trends. One where creativity and craft meet in a distinctly unique way. And where we can truly be ourselves. We think we did that.
Five and a half years later and we know it’s time to start thinking about the future of Vex. We’ve developed a vision for our careers and that needs a new plan.
So, if any young aspiring restauranteurs want to have a chat about taking on a beautiful little space for your first shot at independence, then please reach out.

We’re back! Another exciting year ahead for our little independent food and wine thing. Thank you in advance for your support, it really means the world to us!
Although we don’t set ourselves grand resolutions at the start of the year, we do promise to continue focusing on you.
We’re often told that we need to boost our social media engagement, but what we really care about is what happens tableside.
The precious gift of quality time to make sure you are having the experience you desire. That’s what really counts to us.

Just the annual reminder that we are sometimes here, and then sometimes not.
We have our schnitzel lunch this coming Saturday AND we are doing a full day of service for NYE! That’s right, lunch and early dinner so you can get on with your party, or cosy evening at home plans!
It’s been a long, long year. But then again it’s also raced by. All we know is that we need a little time to rest, reset and wine. Always wine.

It’s been a big year. We all deserve to celebrate it a little, or maybe a lot.
Our Spagat Krapfen are a traditional Styrian cinnamon pastry, fried fresh for family festivities.
Christmas, weddings, birthdays, or maybe just a lovely evening catching up with loved ones.

What the actual f**k? It genuinely feels like just yesterday, when a small group of dreamers decided to go ahead and do, what most people advised us against.
The past 5 years have presented some challenges, but there’s something we’re still certain of - we really love what we do and we’re forever going to do it our way.
From day one the mission has been to create a product, environment and community that reflects our values. We believe in focusing inward, mastering our craft and treating everyone around us with the respect they deserve. And of course, making sure it’s as delicious and unique as possible.
To make that happen we’ve had the help of some truly magnificent people, friends and colleagues that we owe a great deal of thanks to. You’ve gone above and beyond and made this place what it is.
And of course we have the most incredible local clientele that has believed in us from the start and continues to support us every day. Thank you from the bottom of our hearts for giving us your trust. It’s hard to describe the joy of a dining room filled with local community.
We don’t know what comes next for Vex, but we do know we’ll never compromise or change the way we are. No trends, no hype, just honest independent hospitality.

*** The Saturday Sessions. Vol 7.
What a huge year, with so many things to celebrate. Potentially the most important though, is the fact that our favourite turned 10 years old.
Vex is turning 5 this November as well, but Flo has been cooking with Paul’s beautifully grown produce since 2016. If you’ve dined with us, you’ll know that the menu is largely shaped by what the farm provides us.
So we thought it would be absolutely necessary to do a 100% farm lunch. All veg, from one place. We’ve already been preserving the best of the spring produce, and there will be some early summer items joining the menu too.
We are so excited for this one off lunch, with dishes never to be seen again!

It’s been another tough year for the ones without huge marketing budgets and bargaining power. The last few months can really make all the difference.

*** Hats, Glasses and kisses.
It’s been a hell of a year. We can’t lie, the toughest yet. Being a small independent restaurant is never easy work, sometimes it feels impossible.
But then you have these beautiful moments, not the ones where you win awards, but where you get to spend time in the company of immensely inspiring people, that reminds you why hospitality is so damn important. We are so proud to be a small part of this amazing world of talented individual and teams.
So thank you to and for the acknowledgement, but mainly for bringing together so many beautiful people to spend a well earned day celebrating each other.
Thank you to everyone who’s supported and trusted us with your experiences and so much love to our dear team (it’s 4 of us) past and present, you are what makes this happen.
We’d love to see you again this year, it’s shaping up to be a beautiful summer and we can’t wait to have you in our ‘boho hangout’.
