Mud crab/leek/Geraldton wax

Mud crab meat seasoned with charred elderflower and elderflower gel, topped with charred leek and leek crisp, finish with a sauce made from Geraldton wax and crab shell oil

On the side is a tart filled with leek trim that has been slowly cooked in crab stock, finish with pickle mustard seed, lemon thyme oil and crab gel

Aged rockling, served with onion cream, fermented black truffle sauce, and smoked oil.
Finished with just-cooked onion, pickled onion, and crisp onion ring

Warm tea bread brushed with fermented honey, served alongside tea cream to complete the fish course.

Red Carid Prawn 🦐

These incredible prawns from WA are showcased in three different parts

prawn meat, gently confit in oil to lightly firm the skin while keeping the center raw. Paired with a mix of new season chestnut, fig, and radish, finished with mandarin kosho cream, and a rich prawn shell sauce split with fig leaf oil and prawn oil.

a coral lettuce leaf filled with prawn mayo, roasted sunflower seed emulsion, and red wine vinegar gel to bringing contrast in texture and brightness.

Finally a tableside pour of warm broth made from prawn shells, infused with wild fennel to complete the experience.
