Chef Migo has taken a childhood Filipino favourite - pork tocino - and turned it into a flavour and texture packed vegan dish. He substitutes pork for beancurd skin and slowly cooks it down in the traditional pineapple juice marinade, resulting in the same sweet, tangy and caramelised flavour that makes tocino so moreish.
