Lunch, unhurried.

Casarecce twisted to hold the sauce, tossed through a pesto of basil and pumpkin seeds. Smoked sundried tomato for depth, cime di rapa for bitterness, chilli underneath it all, parmesan over the top.

Three courses at Pastore, built around the wood grill. Focaccia pulled straight from the flame and finished with our signature burnt butter. Sher Wagyu MB9+ Vitello Tonnato with tuna emulsion, fried capers and red wine jus. Amber Porchetta, slow-roasted until the crackling gives way, with green beans and Patate Arrosto.
