This cake was a surprise for a dear friend who spends so much of her time looking after everyone else that she rarely takes a moment to celebrate herself.
I don’t usually accept last-minute cake requests, but this wasn’t really a request—it was a personal surprise. With only a short amount of time, I kept it small, elegant, and focused on what mattered most.
Rich chocolate ganache, marble-inspired hexagons, and touches of gold for someone who deserved to feel celebrated, even if just for a day.

Some stories are told from the inside out. 🍋
This design started with a flavour I’ve loved for years.
It was inspired by a raspberry cake with a lemon glaze that a friend once made. I fell in love with the combination, but over the years I made it my own. I replaced the glaze with a homemade lemon butter that I developed (more on that in the next post).
The sponge itself is baked with raspberries throughout, while the lemon butter brings everything together.
Although I’ve been making this flavour for years, it never had a design that truly reflected it. This cake finally gave it one. Fresh lemon slices wrap around the cake while raspberries crown the top, letting the outside tell the story of what’s waiting inside.

Some stories aren’t told on the surface 🧜♀️✨
An old folklore tale tells of a sailor who spotted a chest of gold hidden among the rocks of a small cove.
Every time he returned for it, he caught a glimpse of a mermaid slipping beneath the waves.
He became convinced she was guarding the treasure.
The villagers warned him to leave it alone.
The more he chased the gold, the further out to sea he sailed.
Eventually, both the sailor and the treasure disappeared.
Years later, I came across that story and never quite forgot it.
So when a 12-year-old client asked for a mermaid on her birthday cake, it was the first thing that came to mind.

Sometimes it’s the smallest details that bring a scene to life.
The flames on this cake weren’t meant to be one solid colour. Real fire isn’t.
I layered different shades of sugar, from pale yellow through golden amber, so the flames would feel like they were glowing rather than simply sitting on the cake.
Combined with the suspended dragon and the stone tower, every element was designed to make the scene feel like it had been frozen in the middle of the action.
They’re the details I hope people feel, even if they don’t immediately notice them

Some of the best stories start with a child’s imagination 🐉✨
This story started with a little boy I’d made cakes for many times before. He always had very particular and detailed requests.
This time, however, he simply handed me his favourite dragon toy and said,
“I want this on my cake.”
That was it.
No flavour.
No colour.
No theme.
Just a little plastic toy.
So I asked him what he liked about dragons.
His answer was simple.
“They’re magic, they fly and they breathe fire.”
Children have a way of giving you just enough information to imagine the rest.
Magic.
Flying.
Fire.
From those three words, the whole story unfolded.
A dragon magically suspended in mid-air, flying above a stone tower and breathing fire onto it.
When he finally saw the finished cake, he excitedly said,
“Wow… it flies.”
At that moment, I knew I’d brought a little piece of his imagination to life ✨
