We are one of the only Mexican restaurants in Australia handmaking their tortillas from nixtamalised corn.

Nixtamalisation is a traditional technique where corn is soaked overnight in an alkaline solution, before being ground over volcanic stones in a molino.

In goes corn, out comes dough.

The dough is then rolled, press and put on the grill to cook before becoming a taco.

The taste is worth the work!
