We are one of the only Mexican restaurants in Australia handmaking their tortillas from nixtamalised corn.
Nixtamalisation is a traditional technique where corn is soaked overnight in an alkaline solution, before being ground over volcanic stones in a molino.
In goes corn, out comes dough.
The dough is then rolled, press and put on the grill to cook before becoming a taco.
The taste is worth the work!

Mexican restaurants are known for their vibrant and bold flavors, and Hotel Jesus on Smith Street in Melbourne is no exception. With a new menu that features exciting dishes like Pescadillas (Sinaloense style fish tacos) with smoked marlin salpicón, rajas, and avocado, and Chicharrón - fried, puffed pork skin served with guacamole and rajas - there's something for everyone to enjoy. The restaurant also offers special menus for occasions like Mother's Day, where guests can indulge in a delicious banquet featuring dishes like Pink snapper grilled in banana leaf spiced yucateco butter and Postre peaches and cream crumb de almendras. And if you're looking for a quick lunch option, the reworked burritos are sure to satisfy your cravings. With its lively atmosphere and mouth-watering food options, Hotel Jesus is definitely worth a visit.
