We spent over 10 years building Hinoak.
Yesterday, it took one day to empty it.
I’ve been staring at these photos for hours trying to find the right words.
Walking through Hinoak after everything had been taken out was one of the strangest feelings I’ve ever experienced. The tables were gone. The grills were gone. The familiar aroma of pork belly, wagyu and galbi sizzling over charcoal had disappeared.
It was just… quiet.
Every corner brought back a memory. A customer. A birthday. A first date. A packed Friday night. The countless nights we’d gather around Tables 14 and 15 after service, replaying the night we’d just survived.
When we bought this building in 2015, most people saw an old archery shop.
We saw possibility.
Two years later, Hinoak opened its doors.
Looking back now, I realise we didn’t just build a restaurant.
We built a place where strangers became regulars, regulars became friends, and friends became family.
Before I locked the doors for the last time, I quietly said,
“Thank you, Hinoak.”
Not because it was just a restaurant.
Because it became one of the biggest chapters of my life.
Yesterday, Hinoak got emptied.
And if I’m being completely honest…
So did I.
For over ten years, Hinoak wasn’t just where I worked.
It became part of who I was.
As I walked away, I asked myself the same question I asked back in 2015…
“What now?”
Maybe that’s what life is.
One chapter ends so another one can begin.
To every customer, staff member, supplier and friend…
Thank you.
You didn’t just support a restaurant.
You became part of our story.
Buildings can be emptied in a day.
But memories never will.
