Rich, silky and deeply savoury, our Soy Tonkotsu is built on a broth patiently developed from pork and chicken, layered with soy, ginger, garlic and a touch of apple for subtle sweetness.
It's topped with smoky ibushi pork chashu, a perfectly jammy umami egg and a bright finish of yuzu, bringing balance to every spoonful.
