No need to remortgage your house, there’s lots of amazing salads that don’t include lettuce. A family favourite in winter is a fennel and orange salad, dress it with a little extra virgin olive oil, lemon juice, salt and pepper. It goes best with fish or chicken.

Thank you for your kind words which I finally read after coming out of ICU. It’s been a crazy time but I’d like to share what happened as it may help someone who needs to read this. On 4/5 I went in for a simple day procedure to clean up the bursitis in my shoulder. I told Valentina I’d call her after school and Dad would bring me home late afternoon. Mmmm not quite, the operation went well but in recovery my blood pressure plummeted, the adrenalin didn’t work and then my heart wasn’t beating properly. My fast thinking anaesthetist put me back to sleep to avoid further heart damage and I went to The Alfred ICU where I was on life support and woke up on Monday afternoon. I remember seeing a whiteboard message saying Lidia you are at The Alfred ICU today is Monday 9th May. All I could think is oh how did I miss Mother’s Day with my kids? And then I saw I was hooked up to a ventilator and so much machinery- all I could think was so this is how I’m going to die? My daughters Jessica and Adriana and my husband were at my side (Valentina wasn’t allowed in and they didn’t want to scare her) they were crying and I wanted to say it’s going to be ok but the words didn’t come out. Once I left ICU a week later they did an angiogram and amazingly they protected my heart and it’s healed itself. But there’s still a way to go- this is the chance to be under the care of a cardiologist and finally not accept that my low blood pressure is my normal. No actually it’s not- I’ve been fainting since I was 5 years old. I’ve scared my family and friends many times and sometimes I don’t trust myself to be out of the house alone. This is not how I want to spend the rest of my life. I know it’s not an easy road as it’s easier to lower blood pressure than raise it in a healthy way but I’ve promised myself I will find answers. Thank you for your patience and I know that you will understand that this is my priority and it may be a while before I start catering again. I love you, please don’t put up with bu****it doctor excuses and enjoy the little things as I can promise you one thing you won’t be enjoying your special things in the next place ❤️

Tried something a bit different in the slow cooker today. Pork glazed with honey, soy sauce and sweet chili served with Asian greens. Yummy. * Here’s a tip- ladle out some of the pan juices and place in a saucepan, add one teaspoon of cornflour and a little water to make a paste and trickle it into the saucepan of pan juices, bring it to the boil so it thickens. A lovely glaze to serve with your pork.
