Things are better in threes and our singles are no exception.
The volcanic soils of Brazil provide ideal conditions for growing the São Silvestre’s farms main varieties. A Yellow Catuai tasting of strawberries and cream, alongside a cranberry toffee-forward Red Catuai.
Rounding out our this week’s drop is an heirloom variety from Aricha in Ethiopia. A washing station known for producing coffees with juicy fruitiness and sugary, floral sweetness.

Apolinar Arevalo - Peru Washed
Back for the 5th year, this is a very special partnership for us. Apolinar Arevalo makes some incredibly tasty coffee, and we’re committed to seeing him succeed!
At 2000 metres above sea level, Apolinar’s farm is one of the highest in the region. He is constantly working on fermentation experiments in an attempt to improve quality and consistency.

São Silvestre - Brazil Aerobic Fermentation Natural
The farm is situated at an altitude ranging between 1100-1220 meters above sea level, with perfectly balanced wet and dry seasons. These perfect conditions, combined with meticulous crop management, forward-thinking crop planning and post-harvest selection, mean the final result from Andrade family farms are award- winning coffees; known both nationally and internationally as some of the best coffee the country has to offer.

Introducing Manos Juntas - Colombia Natural
Manos Juntas is a micromill in Sotara area of Colombia's Cauca region. The entire concept of this
micromill is based on simplifying tasks and responsibilities, for both producers and the exporter.
This particular offering was first purchased in its cherry form when delivered to the mill by eight local producers, on the day of harvest.
Upon arrival, the coffee cherries are placed in large hermetic tanks for a five-day-long anaerobic fermentation. Each tank is labeled with the name of the producer, to retain traceability.
It is is then "aged" in tanks for a period of five more days before they are taken to solar dryers. The drying process takes 30–45 days.
This natural variety is beautifully balanced with tasting notes of Boysenberry & Panela.

Introducing Zeleke Shore - Ethiopia Natural
Zeleke Shore uses agroforestry techniques to produce some of the highest quality crops in Ethiopia.
While Ethiopia is famous as coffee’s birthplace, today it remains a specialty coffee industry darling for its incredible variety of flavours. The exceptional quality of Ethiopian coffee is due to a combination of factors including the the genetic diversity of coffee varieties and the processing methods. The final key ingredients for excellent coffee in Ethiopia are the producing traditions that have created the genetic diversity, processing infrastructure and great coffee we enjoy today.
In the cup, his coffee is delicate and floral with notes of dried fruits, muscat grapes and hibiscus.

Our single this week is Limu - Ethiopia Washed
Limu lies within the Djimma zone in the western highlands of Oromia, Ethiopia. The area is famous for its forests and abundant supply of water. The forests create the perfect conditions for the organic matter like fallen leaves and dead trees to compost and return their nutrients to the soil. This cycle of dirt returning to dirt means hummus-rich soils that keep coffee trees well fed.
The coffees grown here are famous for their beautiful effervescent brightness and sweet floral notes and this is no exception. With notes of freshly squeezed orange juice and oolong tea, this coffee is a must try.

Marta Alemu - Ethiopia Natural
Marta Alemu is a passionate coffee farmer in Ethiopia. Being a single farmer lot, this coffee is quite unique.
Usually lots from this part of the world are made up of many different smallholder farmers and sold through cooperatives then graded and exported. Part of the “Lalisaa project” (meaning; flourishing and growing) agroforestry techniques are used to create the unique microclimate that helps elevate the quality of this lot.
We are a huge fan of this project and natural processed Ethiopian coffees. This coffee makes a beautiful espresso or if you want, it makes for a delicious milky coffee as well.

To reach the coffee shop, you can take the tram and get off at the Elizabeth Street/Collins Street stop. From there, walk east on Collins Street and turn right onto Russell Street. Continue walking south on Russell Street until you arrive at the destination.
Alternatively, if you are driving, head south on Queen Street from the city center and turn left onto Lonsdale Street. Turn left again onto Russell Street and drive until you reach your destination. There is parking available in nearby lots or along the street, but be aware of time limits and fees.
