A proud member of the Nasa Wes’x community within the Gaitania reservation, Don Olimpo Ramos has dedicated more than five decades to cultivating coffee at Finca Tres Cruces in the mountains of southern Tolima. As a respected community leader, he has helped champion specialty coffee as a pathway toward resilience, following the landmark 1996 peace agreement that transformed the region.

For the Nasa Wes’x community, coffee represents far more than an agricultural product. It is a sustainable livelihood, a means of protecting culture and tradition, and an expression of deep respect for the land.

This week, we are sad to farewell the stunning, fruit-forward lot from Benti Korbo Drying Station.

Don Fernando takes great care to produce only exceptional coffee, as sustainably as possible. He and his team hand pick coffee cherries at their peak ripeness, before de-pulping the coffee at his on-site beneficio.

After de-pulping, the fresh parchment is dry fermented in concrete tanks for 18-24 hours for fermentation and mucilage break down. The coffee is then washed using clean water to remove the remaining mucilage and dried on concrete patios on site for up to 5 days, weather depending.

Enjoy the El Pacayal Washed Filter coffee, now available online or in-store.
