Our Yuzu Salmon Tartare features fresh Atlantic salmon folded through creamy avocado, crisp cucumber, shallots, and bright grapefruit zest, finished with a punchy yuzu kosho mayo. All served in a crisp, beetroot-infused tapioca pearl cracker, garnished with edible flowers and fresh dill.

To get to Level 1/200 Bourke Street in Melbourne, you can take the train to Flinders Street Station and walk for about 5 minutes. Alternatively, you can take any tram that goes along Bourke Street and alight at the nearest stop.

If you're driving, there are several parking options nearby including car parks located at 59 Lonsdale Street and 392 Little Bourke Street. You may also find street parking available on some of the surrounding streets.

Once you arrive at Level 1/200 Bourke Street, look for the entrance to the restaurant which should be easily visible.
