I could eat this every day! ๐คค
I love everything about a Vermicelli salad. The different textures, the warm temperature but fresh flavour. And the comfort of it regardless of whether it's cold or warm outside.
Here is the ingredients for my lunch today and one of my favourite meals ever! It's healthy, flavour full and also gluten free!
๐ฟBrown rice Vermicelli (cooked in boiling water, drained then rinsed in cold water)
๐ฟGrated carrot
๐ฟSpring onion
๐ฟAsian herbs (I love thai basil, coriander and mint)
๐ฟPopcorn chicken (see previous post for recipe) OR crispy tofu OR sliced beef strips
Nuoc cham dressing
๐ฟ 6 tablespoons water
๐ฟ 2 tablespoons fysh sauce (I use niulife)
๐ฟ 1.5 tablespoons lime juice
๐ฟ 2 tablespoons raw sugar or coconut sugar
๐ฟ 1 garlic clove chopped
๐ฟ 1 tsp ginger finely chopped
Place warm noodles into a bowl. Add grated carrot, spring onion and your choice of warm protein. Sprinkle asian herbs. Drizzle nuoc cham dressing. Sit, be present and enjoy ๐.

A gift of togetherness ๐
Today was special. I was asked to make sausage rolls and my 'organic grazer' for a family who were gathering to talk about their mums eulogy. They wanted to make it extra special. I felt so honoured to be able to contribute to this. This is what I love about food. About real, whole, nourishing, delicious food. It provides the nutrients to sustain us and keep us healthy. Yes. But it does so much more than that.
Yesterday I got to pick olives with friends in a friends backyard while listening to how her family used to do this in Italy, the traditions, togetherness and rituals. And today I was able to provide something special for someone else's moment of togetherness and love. You know you have found your purpose when you're cooking in your kitchen for people and shedding small tears because you get to support people like this! Grateful ๐

I am introducing a weekly meal rhythm to Kara's Organic Kitchen, to bring a clear, supportive and consistent flow to your week. Life is busy. And we carry a lot of information in our brains, which is why structure and routine is so important to me. And I want that for you.
๐ฟ Each week on Tuesday mornings I will release 8 organic meals. Meals can be purchased in singles or in a meal bundle (see website for bundle savings).

Easter prep! High protein style ๐
These crepes are so delicious, incredibly healthy, high protein and do not need resting time. Win! ๐. I cannot wait to indulge in these tomorrow ๐.
This was adapted from a cottage cheese pancakes recipe sent from a friend that I turned into crepes. They are perfect for breakfast or a high protein snack or school lunch box treat for the kiddies. ENJOY! ๐
INGREDIENTS - makes 10 crepes
1.5 cups yoghurt or cottage cheese (I have tried both and both are great)
1. 5 cups oats
6 eggs
1 tsp vanilla
1 tablespoon olive oil
Butter for frying
METHOD
Place all ingredients except butter in a blender and blitz until smooth. Place pan on medium heat. Spread a tsp of butter in the pan. Pour half a cup of batter into the pan and roll around so you get a thin layer of crepe. Flip in a few minutes. Cook other side and place onto a wire rack to cool.
Enjoy with your favourite toppings and feel the protein nourishment ๐ฅ๐ฟ
