Our Chantaburi spice butter begins the way it always has: with fresh, homegrown herbs and spices, carefully hand-pounded the traditional way — just like our grandma, Praprai, has done for generations. The result is a paste that’s vibrant, aromatic, and gently tangy, capturing the true essence of coastal Thai cooking.
When paired with sustainably sourced premium barramundi from Queensland, the intention is simple — honour the ingredients. We enrich the spice with a touch of brown butter, adding depth and a delicate umami that elevates, without overpowering.
This dish is not about complexity. It’s about restraint, respect, and letting each element speak for itself — the freshness of the sea, the brightness of the spice, and the warmth of tradition.
What makes it truly special is the story behind every bite. The paste is still hand-pounded by a single pair of hands — a ritual passed down from Chantaburi to Bangkok, and now to Melbourne. A third-generation legacy, preserved in flavour.

“Why is there a gado-style dish on a Thai menu?”
And our answer is simple:
Because Thai food has always been shaped by cultural exchange.
Thai food heritage is influenced by trade routes and migration.
For example, noodles (Kuay Tiew) came from Chinese merchants and became part of everyday Thai cooking.
In the same way, spices and flavours from India and the Middle East travelled into Thailand and blended with local ingredients. From this history grew a rich Thai Muslim culinary tradition, including dishes with warm spices and satay-style sauces.
This is where our snack is born. Its traditional Thai inspiration is called Salad Kheak — a dish rooted in Thai Muslim food heritage and spice-route flavours.
We chose to present it as a tartlet and used twice-cooked potato to give it a creamy yet textured bite, similar to the well-known gado-style salad many guests recognise.
While the name helps guide the idea, the flavour profile remains truly Thai at heart.
So our Potato Gado Tartlet is really:
Salad Kheak, reimagined in a modern form.
Crispy shell.
Twice-cooked potato.
Rich satay-style dressing.
Fresh herbs and perfect balance.
A small snack with a long story of cultures meeting on one plate.
And honestly… one tartlet is never enough.
