A quick chat in the kitchen with our chef Andrea about her favourite dish on our menu. Her answer, the Lomo Saltado.
Beef eye fillet seared fast in a hot wok so it stays tender with a caramelised edge, then red onion and cherry tomatoes cooked just enough to keep their freshness. The saltado sauce of soy, vinegar and aromatics brings savoury depth and a little acidity, with a light smokiness from the wok.
Andrea likes it best with rice, and we agree.
