Java | Natural from La Siberia in El Salvador
Finca La Siberia has been in the Silva family since 1870, making Rafael Silva Jr. the sixth generation to carry on the familyโs coffee legacy.
The Silva family grows everything from Bourbon and Pacamara to SL-34 and Geisha, with Java being one of the rarer varieties on the farm. An heirloom variety with roots in Indonesia, Java is prized for its distinctive, exotic cup.
This natural lot comes from some of Siberiaโs most carefully tended tablones, with whole cherries slowly dried on raised beds.

We all know how different coffee can be from varietal to varietal and country to country, but weโre continually blown away by just how much it can vary within the same country.
In Panama, one coffee that has shaped our palate and stuck with us is the Washed Geisha from Finca Auromar.

Pacas | Washed from Manuel Vallecillo in Honduras
Manuel Vallecilloโs coffee journey began in Santa Barbara before taking him to the United States and eventually back home to coffee production. In 2014, he purchased Finca Los Primos and planted it exclusively with Pacas, a variety that thrives in the regionโs unique microclimate. Manuel now splits his time between Honduras and Houston, returning each harvest to oversee production on the farm.

Pacamara | Anaerobic Natural from Santuรกrio Sul in Brazil
In the hills of Carmo de Minas, Santuรกrio Sul was founded with experimentation in mind. Rather than focusing on volume, producer Luiz Paulo Dias Pereira has built the farm around exploration, growing more than 30 coffee varieties and refining how each responds to terroir and processing.
This coffee is a reflection of that approach. Pacamara isn't a variety typically associated with Brazil, but in the hands of Luiz Paulo and the team at Santuรกrio Sul, it pushes beyond the expectation of traditional Brazilian coffee.

New Deluxe Release from one of Panamaโs most celebrated producers!
The Lamastus family has spent more than a century growing coffee in Panama's Boquete region, producing some of the most celebrated Geishas the world has ever seen. Their Elida Estate has become synonymous with excellence, earning multiple Best of Panama titles and setting records along the way.
This lot comes from Falda, a section of Elida Estate perched high on the slopes of Volcรกn Barรบ. Processed as a traditional natural, it showcases everything that has made Elida legendary.

Geisha | Natural from Olman Valladรกrez in Nicaragua
Finca Los Alpes sits high in Nicaragua's Dipilto Mountains near the Honduran border. The Geisha trees here are still young, producing their first harvest in 2023, but they've already made history. Under the management of Olman Valladรกrez, the farm earned first place in the Cup of Excellence in both 2023 and 2024 with a natural Geisha just like this one. Grown from Panamanian seed stock, this lot highlights the variety's tropical side in a seriously delicious way.
