Settle in for SMOKE & SLOW at Pastuso.

At the centre of Pastuso is our beloved Aunt Lucy. While native to Australia, this large Queensland bottle tree is related to many similar species found in Peru, making it a natural fit for our restaurant. Carefully sourced and brought into the venue, it now sits at the heart of the dining room, framing the space without interrupting it.
The name, “Aunt Lucy” is a subtle nod to Paddington Bear, Pastuso’s namesake and his connection to “deepest, darkest Peru” - the tree reflects what Pastuso has become: something established, well-travelled, and still growing.

We smoked this free-range Bannockburn chicken in our huge smoking tower, bringing in an earthy caramel character, and amplifying the moreish umami flavours of the meat. Pair it with a bright and tangy Ají Pollero sauce and you've got yourself a modern Peruvian classic.
