Next March, we welcome Sam Lawrence of .nyc to Cutler for .
Last week, Bridges was awarded its first Michelin Star, and will now join us in Melbourne for MFWF’s 2026 Global Dining Series. Over two nights, Sam Lawrence (ex-Bones, Paris, and Estela, Manhattan) will cook in our kitchen, bringing his distinctive blend of Parisian and Basque influences to Gertrude Street.
Along with Bridges co-owners, Josey Stuart and Nicolas Mouchel, they’ll deliver their sharp, playful energy to Fitzroy with a menu shaped by Sam’s expressive style and the best of Melbourne’s autumn produce.
Reservations for Bridges at Cutler go live tomorrow at 10am.

Last night, we had the joy of hosting friend, colleague and chef, Annie Smithers from for a special dinner. An early adopter of the paddock-to-plate philosophy, Annie’s cooking is firmly rooted in the rhythm of the seasons and the varied produce they offer.
Along with our team, Annie cooked a generous menu, anchored in the farm produce she sources from near to her home in Central Victoria. Her double-baked Comté soufflé was generous; the black-faced Suffolk lamb tender and her lemon meringue roulade made the most of winter’s last citrus. The whole room was filled with warmth, as we laughed and learnt with her.
Thank you, Annie. We can’t wait to cook with you again.

We welcome Tomos Parry of London’s Brat and Mountain to Cutler for Melbourne Food & Wine Festival 2025.
Tomos, a Welsh chef with a passion for the cuisines of the Balearic Islands and Basque country, is at the forefront of the fire-driven food scene we love so much in London.
There’s no doubt he caused a stir when he opened Brat in Shoreditch in 2018 and then Mountain last year—with Brat and Mountain sitting at 65 and 94 on the World’s 50 Best Longlist, respectively.
In March, he’s bringing this buzz to Gertrude Street with a menu full with late autumn produce. We can’t wait to see what Tomos cooks and creates in our kitchen, and to welcome you, too.
Reservations for Brat at Cutler go live this Thursday at 10am.
