We take our carrots further on the grill than most kitchens would. The char gives you bitterness and sweetness in the same bite. Then they go on a base of tahini yoghurt, finished with pilpelchuma, a North African chilli paste built on paprika, garlic and warm spice. It's vegetarian and can be made garlic and onion free on request. One of the sides regulars order every time.
