Gnocchi, pine mushroom ragu, fontina cheese.
Soft, pillowy gnocchi soak up rich wild pine mushroom ragu, layered with deep savoury flavour. Finished with torched fontina, bringing a gentle creaminess and nuttiness that settles through the whole plate.

The countdown to Est Est Est 30 Years On is officially on, and Donovan Cooke has opened up the Marriages Cookbook to revisit one of the restaurant’s most iconic recipes.
Pithivier of Slippery Jack and Pine Mushrooms, Sauce Madeira. Crisp pastry, herby crepes, earthy mushrooms and truffle-flavoured mousse layered into the kind of cooking that takes you right back to the 90s.

A tribute to the great Est Est Est.
For one night only, we revisit one of Melbourne’s most influential restaurants of the 90s — a venue whose passion, precision and wild flair helped shape the city’s dining culture as we know it today.
Recently returning from his tenure in Hong Kong, Chef Donovan Cooke is excited to revisit some of the dishes which made Est Est Est a Melbourne institution, reimagined with a 2026 panache. Joining him and leading the charge in the dining room is Franklin Heaney, who brings his signature style of service to the table.
A five-course menu with matched wines from Bass Phillip, Bindi and Giaconda — which were listed with pride on Est Est Est’s wine list.

Bluefin tuna is one of the most structured and technically unique fish we work with.
Defined by its deep colour and intramuscular fat, it carries a level of marbling more commonly associated with red meat. This gives the flesh its density, its richness, and the ability to hold up to heat in a way few other species can.
From the loin through to the fattier sections, each cut offers a different balance of lean muscle and fat, which is why careful breakdown is essential. Where it’s cut from directly influences how it eats.
Handled correctly from the moment it is caught, it’s a product that relies on precision more than intervention.
On the menu, we take the rib eye cut, grill it over red gum and serve it rare, finished with a whey beurre noisette, fresh horseradish and lemon to sharpen and balance the natural richness of the fish.

Grilled over red gum and served rare, with a browned whey butter that brings a deeper, saltier edge. Finished simply with fresh horseradish and lemon to cut through.
