Bai Sach Chrouk. Grilled pork and broken rice. Cambodia's breakfast. The one that wakes up the whole street.

Thin slices of pork, marinated overnight in coconut milk, garlic, and black pepper. Charcoal grilled, low and slow, until golden and caramelised.

Served on broken rice with a crispy fried egg, pickled daikon and carrot, fresh cucumber, and a bowl of clear broth on the side.

Sach Ko Ang. Cambodian grilled beef skewers.

The recipe: fresh lemongrass, galangal, garlic, palm sugar, turmeric, fish sauce, black pepper. Marinated by hand, overnight, so the kroeung sinks deep into every fibre.

Then charcoal. Real charcoal. Grilled low and slow until the edges caramelise and the smoke does its magic.

The sauce? Tuk Meric — fresh lime juice, cracked black pepper, a pinch of salt. Simple but perfect.
