Not all great sparkling wine comes from Champagne.
Franciacorta, from Lombardy in northern Italy, is made using the same traditional method as Champagne - secondary fermentation in bottle, time on lees, and careful craftsmanship but with its own Italian identity.
Often more textural, generous, and quietly elegant, Franciacorta remains one of the world’s most underrated sparkling wines.
A reminder that “traditional method” is not exclusive to Champagne - only the region is.

This conversation should not be about turning guests against restaurants, or restaurants against guests.
We are not asking everyone to agree with us.
But we are asking for fairness, context, and respect.
For the small independent restaurants trying to keep their doors open, for the staff who work long nights, and for the guests who genuinely value what hospitality brings to a community - we need more understanding, not more division.

Sweet or dry?
Most of the time, the answer is already on the label.
A quick look at the alcohol percentage can tell you more than you think — especially with white wines.
Lower alcohol usually means more residual sugar left in the wine.
Higher alcohol usually means the wine fermented dry.
