Behind the Pass vol.2!
Take a pew while Head Chef Inma shows you how to make our seasonal paella. Our Summer menu version was a play on a fishy black paella, while the one on our menu currently is a classic saffron paella served with heirloom brassicas in a refreshing lemon dressing.
Don’t let the socarrat go to waste!

With new food comes new drinks, including our Old Fashioned.
A blend of Straight Rye and Black Ruby for a high spice base with plenty of rich chocolate notes, supported by Vetiver Gris and whey caramel.
We make a ton of ricotta between Daughters and with whey being a natural by-product. When cooked down with some sugar you get this rich, biscuit-y caramel with a ton of complexity and depth. It made absolute sense to have it as the backbone for a new autumnal cocktail

Chile Relleno
A riff on the Mexican classic, vegan-ised by our beloved Kitchen Nick. Traditionally made by stuffing a bullhorn pepper with cheese before battering and deep frying, ours is made in much the same way. Stuffed with bechamel and caramelised onion, it’s battered and fried then served on a smoked creamed corn then topped with a fermented pineapple salsa for maximum tang.
Naturally gluten-free and one of our favourites this menu.

Kombucha!
We have a couple variations on our list:
• Classic - a no-frills kombucha with a base of Ceylon black tea, bright and refreshing
• Sleepy - a fun, bedtime-friendly kombucha with 0 caffeine, made with chamomile, whole orange and valerian (pictured here)
• Fruity - seasonal and sweet, this one changes with the seasons and is perfect for those who like a lil treat, currently ceylon tea and strawberry but changing soon
All our kombuchas are made by us and completely unpasteurised to keep all the good stuff in! Keep an eye out around the restaurant for our scoby hotels or fresh batches brewing and flag down Jo if you wanna get nerdy about the details!

Black rice paella, seaweed, aioli
A standout main on our new menu! Forbidden rice (black rice considered so special it was reserved only for Chinese royalty) is cooked in a soy and kombu broth, then topped with a trio of Japanese seaweeds and tonnato - a tuna aioli.
Available on our 3-course set menu and à la carte.
